Hi, my name is Mandy and I have been running Spokane Gluten Free Eats (Spokane Gluten Free Living), since Jan of 2017. I was diagnosed as a celiac in late 2009 after struggling with many health issues that would not resolve no matter the medication they put me on. My Celiac diagnosis gave me a second chance at living a healthier and longer life! I feel like I enjoyed life for the first time when I realized how much better my overall heath became within months. Only thing I realized quickly was I could no longer go out to eat safely and no one I knew had any idea what Celiacs Disease was let alone what gluten was. In 2009 Celiacs Disease and "gluten free" were not as common around Spokane. Fast forward a few years where I wanted to help people more and began advocating gluten free locally. As an advocate for celiacs I decided to start a locally based food blog to help others around me find safe places to eat and explore easily. I know it can be difficult to be a celiac, and sometimes lonely when it comes to meals out with friends, but I am dedicated in helping others find safe and supportive places to eat from right here in Beautiful Spokane Washington, to the surrounding Northwest and even the world! My husband and I love to travel all over, eating, exploring and enjoying what each unique place has to offer celicas. Even if that means cooking our own cuisine while traveling (thanks Airbnb) we have fun with it and try to use local foods! Plus we enjoy trying new recipes and even making up a few of our own along the way! Traveling with celiacs disease is hard as well, so I reach out across to other bloggers, read restaurant reviews, use 'Find Me Gluten Free' (its a great app) and even contact the restaurants directly to help guide me when I am traveling and then pass my experience to you.
