This dish was inspired by a dish I enjoyed yesterday at Coles but I used my favorite blend of greens and spices instead. A bright, rustic dish that can be enjoyed breakfast, lunch or dinner and today it was lunch. Pretty easy really and I'll do my best to help you re-create this dish yourself. I aplogize for the dirty stove top, I've been cooking a lot this morning. ;)

What a lovely day. The sun was out, I ate some amazing food, met some new faces and my dog was happy to see me when I got home. I joined a whole wonderful group of folks today from Instagram and together we enjoyed quite the spread from the ever amazing Coles Bakery and Cafe in North Spokane. She adorned our eyes with displays of color and tempted even the dieters in us to sample the many desserts; sorry Rachel I ate a lot of the lemon bar. How could I stop myself when it's THAT GOOD. Coles Bakery & Cafe has been a staple in the Spokane Gluten Free food scene for over 6 years. I remember when she first opened too. I remember eating her food for the first time and knowing, without a doubt, I would love her forever. Begining as a Bakery and steadily expanding to a full service restaurant with options for breakfast, lunch or dinner served all day, every day, Coles is always willing to go the extra mile to make sure everyone can enjoy something she offers. She does Keto, dairy free and Vegan options and yes, its all gluten free all the time. Lemon Ricotta pancakes. Coconut chicken and Fries. Key Lime pie tarts. Biscuits and Gravy... I could go on but I'm getting hungry and I should put my snoring dog to bed. So, trust me, go check her out. You wont be dissapointed.
